Fruity Coffee Cake
by: The Tin Bin 

Ingredients:
2 C. flour; 1 C. sugar; 2 tsp. baking powder; 1 tsp. salt; 1-1/2 tsp. grated lemon rind; 1/2 C. butter; 2 eggs; 1 C. milk; 1 tsp. vanilla; 2 C. fresh fruit (peaches, blueberries, apples) ^^ STREUSEL TOPPING: 1/4 C. flour; 2 T. butter, soft; 1 tsp. cinnamon; 1/2 C. nuts, chopped

Preparation:
Stir first 5 ingredients. Cut in butter with 2 knives. In another bowl, beat eggs and add milk and vanilla. Make a well in the dry ingredients and stir in wet ingredients. Spoon into a greased 7x11" pan; bake at 350 degrees for 35 to 45 minutes. Arrange fruit on top. Make streusel topping and scatter over the fruit.
