Ingredients:
2 C. sugar; 2 tsp. cinnamon; 4 eggs; 2 C. flour; 1 tsp. salt; 3 C. grated carrots; 2 tsp. baking soda; 1-1/4 C. oil
Preparation:
In a bowl, sift dry ingredients. Add oil, eggs and carrots. Mix well. If too thick, add a little water. Bake at 350 degrees for 50 to 60 minutes. Cream cheese icing is great!
