Zucchini with Cheese Sauce
by: The Tin Bin 

Ingredients:
6 to 10 medium zucchini; 1 stick butter; 1 C. shredded Cheddar cheese (maybe use a little shredded Swiss cheese); 8 oz. sour cream; Salt and pepper to taste; 1/4 C. chopped scallions; 1 C. bread crumbs; 1/4 C. Parmesan cheese

Preparation:
Boil zucchini for 10 minutes, cut off ends and slice lengthwise and arrange in a buttered casserole. Make cheese sauce, heating rest of ingredients except bread crumbs and Parmesan cheese. Pour cheese sauce over zucchini and sprinkle crumbs and Parmesan on top. Dot with butter and bake at 350 degrees for 35 minutes. Seves 6 to 8.
