Ingredients:
2 large zucchini, sliced; 1-1/2 C. cracker crumbs; 1-1/2 C. shredded sharp cheese; 1/2 C. Parmesan cheese; Salt and pepper to taste; 1-1/2 C. milk; 3 eggs
Preparation:
Cook zucchini until tender; drain and spread in a 2 quart shallow baking dish. Sprinkle with cracker crumbs, cheeses, salt and pepper. Repeat layers until all ingredients are used. In a bowl, mix eggs and milk together and pour over top. Bake at 350 degrees for 1 hour.
