Ingredients:
6 small squash or 2 or 3 zucchini; 2 T. butter; 1 bouillon cube, crumbled; 1 T. onion, diced fine; 1 egg, beaten; 1 C. sour cream; 1/2 C. bread crumbs; 1/2 C. shredded Cheddar cheese
Preparation:
Cook squash or zucchini until tender. Drain, mash and add salt and pepper, butter, bouillon cube and onion; add egg and sour cream. Pour into greased deep-dish pie plate. Combine bread crumbs and cheese. Sprinkle on top and bake at 350 degrees for 30 minutes.
