Ingredients:
1 onion, sliced; 1/2 bell pepper, chopped; 1/2 stick butter; 1 tomato, peeled and chopped; 2 C. sliced squash; Salt and pepper to taste; 4 oz. shredded Cheddar or Parmesan cheese
Preparation:
Saute onion and pepper in butter; add rest of ingredients except cheese. Cook until squash is tender. Stir in cheese and heat until cheese melts.
