Ingredients:
2 eggs, beaten; 1/4 C. bread crumbs; Salt and pepper to taste; 2 large potatoes, cooked and peeled; 2 T. onion, chopped; 1 C. shredded Cheddar cheese; 4 slices crisp bacon, crumbled
Preparation:
Combine eggs, bread crumbs and salt and pepper. Grate cooked potatoes and measure 3 cups. Stir into egg mixture; add onion, half of the cheese and half of the bacon. Spoon mixture into greased 1-1/2 quart casserole. Bake at 350 degrees for 25 minutes. Remove and sprinkle top with remaining cheese and bacon. Bake 5 more minutes.
