Potato Filling
by: The Tin Bin 

Ingredients:
1-1/2 C. mashed potatoes; Salt and pepper to taste; 2 eggs, beaten; 1-1/2 C. milk; 1 stick butter; 2 T. parsley, chopped; 3 large stalks celery, chopped; 1 small onion, diced; 2 C. soft bread cubes

Preparation:
In a saucepan, saute parsley, onion, and celery in butter. When tender, add cubed bread and continue to brown. In another bowl, combine mashed potatoes, milk and eggs. Fold in bread mixture and pour into a greased casserole. Bake at 350 degrees for 30 minutes.
