Ingredients:
4 medium Vidalia onions; 3 T. butter; 2 T. flour; Dash of pepper; 1 C. beef broth; 1/4 C. dry sherry; 1-1/2 C. plain croutons; 2 T. butter, melted; 2 T. Parmesan cheese; 1/4 C. shredded Swiss cheese
Preparation:
Saute onions in butter until tender. Blend in flour and pepper; add broth and sherry; cook and stir until thick. Pour into 1 quart casserole or deep-dish pie plate. Bake covered at 350 degrees for 30 minutes. In a small bowl, toss croutons with melted butter. Sprinkle over baked onions. Top with cheeses and bake 10 minutes more.
