Ingredients:
6 medium potatoes; 2 C. shredded sharp Cheddar cheese; 2 T. butter; 1-1/2 C. sour cream; 4 oz. cream cheese, softened; 3 chopped scallions; 1 tsp. salt; Dash pepper; 1/4 C. Parmesan cheese
Preparation:
Cook potatoes in skins, cool and peel. Rice potatoes or mash them. Combine cheese and butter in saucepan. Heat on low. Melt cheese. Blend in sour cream, cream cheese, onions, salt and pepper and Parmesan cheese. Fold in potatoes and put into a 2 quart casserole. Dot with butter. Bake at 300 degrees for 40 minutes.
