Ingredients:
2 lbs. fresh flounder fillets; Salt and pepper to taste; 2 T. fresh lemon juice; 3/4 lb. Ritz crackers; 3/4 C. sliced almonds; 3 eggs, beaten; 2/3 C. milk; 2 C. flour; 1/2 C. oil; 1 stick butter
Preparation:
Cut flounder into 6 portions and season with salt and pepper and lemon juice. Crumble Ritz crackers and mix with almonds. In another bowl, beat egg and milk. Dredge flounder in flour and dip into egg mixture. Roll in crackers and almond mixture and pat. Heat oil and butter. Fry fish until golden on both sides. Drain on paper.
