Ingredients:
1 small can salmon (do not drain); 2 C. milk; 2 T. butter; 2 T. flour; 1-1/2 C. rice, cooked; 2 sliced hard boiled eggs; 2 tsp. curry powder; 2 tsp. lemon juice
Preparation:
In saucepan, melt butter and add flour and curry powder. Stir in milk and fish liquid. Add lemon juice and cook until thick. Take off heat and add flaked salmon. In a deep-dish pie plate, place half of the cooked rice, then sliced eggs, then salmon, then rice again. Top with buttered bread crumbs. Bake at 400 degrees for 20 to 30 minutes.
