Ingredients:
2 unbaked pie crusts; 1 C. brown sugar; 2 T. melted butter; 1 egg, beaten; 1 tsp. vanilla; 1/4 tsp. salt; 3/4 C. chopped pecans
Preparation:
In a bowl, stir melted butter into brown sugar. Blend in egg, vanilla and salt. Fold in chopped pecans. Press balls of dough in mini-muffin pan and form crust with fingers. Spoon pecan mixture into mini-crusts (2/3 full). Bake at 350 degrees for 20 minutes. Makes 24.
