Zucchini Bread
by: The Tin Bin 

Ingredients:
3 eggs; 2 C. sugar; 1 C. oil; 1 T. vanilla; 2 C. shredded zucchini; 2 C. flour; 1 tsp. cinnamon; 2 tsp. baking powder; 1 tsp. salt; 1/2 tsp. baking soda; 1 C. chopped pecans

Preparation:
Beat eggs until frothy; add sugar. Add oil and vanilla; beat well. Add zucchini. In another bowl, sift dry ingredients and add to wet ingredients. Fold in nuts. Makes 1 large bread. Bake at 350 degrees for 50 to 60 minutes. Serve with cream cheese.
