Pineapple Muffins
by: The Tin Bin 

Ingredients:
One 8 oz. can crushed pineapple; 3/4 C. milk; 1 egg, beaten; 1-1/2 tsp. grated orange rind; 2 C. flour; 1/4 C. sugar; 1 tsp. baking powder; 1/4 tsp. salt; 1/4 tsp. nutmeg; 1/4 C. butter, melted

Preparation:
Drain pineapple; save liquid in a measuring cup. Add enough milk to make 1 cup. Combine with egg and orange rind. In another bowl, sift dry ingredients. Blend wet ingredients into dry ingredients; add melted butter. Stir in crushed pineapple, drained. Spoon into muffin pan 2/3 full. Bake at 375 degrees for 20 minutes.
