Ingredients:
1/2 C. oil or 1 stick butter; 1 C. sugar; Grated rind of 1 lemon; 1/2 C. milk; 1-1/2 C. flour; 2 eggs; 1 tsp. baking powder; Pinch of salt; Juice of 1 lemon
Preparation:
Combine all ingredients and mix at low speed for 2 minutes. Pour into greased loaf pan. Bake at 350 degrees for 1 hour. Remove from pan in 5 minutes. While warm, pour on bread a mixture of 1/4 cup sugar and juice of 1 lemon. Poke holes in the bread with a fork so glaze soaks in.
