Ingredients:
1 egg; 1-1/2 C. milk; 1/2 tsp. vanilla; 1 C. coconut, shredded and toasted; 3 C. flour; 3 tsp. baking powder; 1/2 tsp. salt; 1 C. sugar
Preparation:
Combine egg, milk, vanilla and coconut in blender. Cover and blend 30 seconds. Sift dry ingredients in a big bowl. Pour blender mixture over dry ingredients; stir a little bit. Pour into 2 greased small loaf pans and bake at 350 degrees for 50 to 60 minutes. To toast coconut, broil until edges are golden.
