Ingredients:
1 egg; 1/2 C. milk; 1/4 C. oil; 1 C. coconut; 1-1/2 C. flour; 1/2 C. sugar; 2 tsp. baking powder; Dash salt
Preparation:
In a bowl, combine wet ingredients including coconut. In another bowl, combine dry ingredients. Add to wet ingredients. Fill muffin papers 2/3 full and bake at 375 degrees for 25 to 30 minutes; sprinkle tops with sugar before baking.
