Ingredients:
4 medium tomatoes; 2 scallions, minced; 1 glove garlic, pressed; 1/2 C. parsley, minced; 1/3 C. bread crumbs; 1/2 tsp salt; 2 T. olive oil
Preparation:
Cut tops off tomatoes and gently squeeze out some of the juice and seeds. Salt and pepper insides. Combine remaining ingredients and spoon mixture into tomatoes. Place on greased deep-dish pie plate and bake at 400 degrees for 15 minutes.
