Ingredients:
4 medium potatoes; 1 T. butter; 1 medium onion, chopped; 2-1/2 C. chicken broth; one 10 oz. pkg. frozen florets or fresh broccoli; 1-1/2 C. shredded Cheddar cheese
Preparation:
Peel and cube potatoes, set aside. Use a 3-quart saucepan, melt butter and add onion; saute 5 minutes; add broth, potatoes, broccoli and cook about 15 minutes (until tender). Keep 1 cup of cooked potatoes aside. Blend all ingredients except the 1 cup of potatoes in blender. Return to pan and add the 1 cup potatoes; add salt and pepper and cheese. Melt over low heat. Serve.
