Ingredients:
2 Bermuda or Vidalia onions; 1/2 C. butter; 1 T. flour; 1/2 C. tomato juice; 6 C. beef broth or consomme; 3/4 C. water; Salt and pepper to taste
Preparation:
Melt butter and saute onions until golden brown. Add flour, stir, then tomato juice, consomme and water. Simmer at least 30 minutes. Salt and pepper to taste. On each serving, float a slice of toasted French bread with 1 teaspoon grated Parmesan cheese on top. You may broil until golden brown.
