Easy Gazpacho

Ingredients:
2 ripe tomatoes; 1 Vidalia onion; 1 bell pepper; one 12 oz. can V-8 juice; 1 can beef consomme
Preparation:
Peel and dice tomatoes. Chop onion and pepper fairly fine. Combine everything and chill. Serve with a dollop of sour cream and chives.
