Ingredients:
1 chopped onion; 2-1/2 stalks chopped celery; 4 T. butter; 3 T. flour; 2 qts. chicken broth; 2 C. creamy peanut butter; 1-3/4 C. light cream; 24 chopped peanuts
Preparation:
Saute onion and celery until soft. Stir in flour and add broth until boiling. Strain in a large bowl. Add peanut butter and cream; blend well and return to low heat. Do not boil. Garnish with chopped peanuts. Serve hot or cold.
