Ingredients:
1/4 C. butter (1/2 stick); 16 oz. pkg. has browns; 1 small onion, chopped; 1 C. chopped ham; 1/4 C. fresh parsley, chopped; 6 eggs, beaten; 1/4 C. milk; Pinch salt and pepper; 1/2 C. shredded Swiss cheese
Preparation:
In a large skillet, saute potatoes and onions in butter (about 15 minutes). Add ham, sprinkle parsley. In another bowl, beat eggs, milk, salt and pepper; and gently pour over potatoes and ham. Cover and cook 10 minutes until eggs are set. Sprinkle with cheese and let it melt.
