Ingredients:
1/2 C. flour; 1/2 C. milk; 1/4 tsp. salt; 2 eggs; 1 C. blueberries, drained; 4 T. butter; 1 lemon, juice only; Powdered sugar
Preparation:
Heat oven to 400 degrees. Blend flour, milk, salt and eggs. Fold in blueberries. In black iron skillet, pour batter into melted butter. Bake 15 minutes at 400 degrees. Remove from oven and squeeze lemon juice over the pancake. Sprinkle with powdered sugar. Serves 2. May also use peaches or any seasonal fruit.
