Ingredients:
3 ripe bananas; 1/2 C. sugar; 1 egg, beaten; 1 tsp. baking soda; 1 tsp. baking powder; Dash of salt; 1-1/2 C. whole wheat flour; 1 tsp. vanilla; 1/3 C. applesauce or 1/3 C. butter, melted
Preparation:
Mash bananas with fork; add sugar and egg; mix. In another bowl, mix dry ingredients. Blend vanilla, applesauce, and dry ingredients. Fold into banana mixture; mix well. Fill muffin papers 2/3 full and bake at 375 degrees for 18 to 20 minutes.
