Ingredients:
4 eggs, separated; 2 C. sugar; 3 T. flour; 1/4 tsp. salt; 4 T. lemon juice plus rind; 2-1/4 C. milk; 2 T. butter, melted; 2 unbaked pie crusts
Preparation:
Beat egg yolks until light and fluffy; add sugar, flour and salt; mix well. Add lemon juice and rind; mix again. Add milk and butter. Beat egg whites until stiff and fold into mixture. Pour into pie crusts and bake at 325 degrees for 40 minutes. Serves 12. Makes 2 pies.
