Lemon Sponge Pie

Ingredients:
1/4 C. butter; 1 C. sugar; 3 T. flour; 3 eggs, separated; 1/2 C. lemon juice; Rind from 1 lemon; 1-1/2 C. milk; 1 unbaked pie crust

Preparation:
Cream butter and sugar until light and fluffy. Add flour gradually; mix well; add egg yolks, lemon juice and rind. Slowly mix in milk. Beat whites stiff and fold in. Pour into a deep-dish pie place (unbaked crust). Bake at 400 degrees for 12 minutes. Then reduce heat to 325 degrees for 30 more minutes.
